The sweet Cilento onion, a Slow Food presidium
At the foot of Mount Stella in Salerno, there is a hamlet of Perdifumo called Vatolla, whose fertile land gives rise to a very digestible onion: the Vatolla onion, recently become a Slow Food presidium.
This onion is known for being very digestible, sweet and with a delicate smell, which also makes it one of the few onions that does not cause tears when sliced.
In the kitchen, the Vatolla onion lends itself to all uses, but in particular it is used to prepare the Cilento onion omelette and the Cilentan sciusciello, a broth of onions and vegetables.
During the summer weekends of July and August, the ancient village of Vatolla becomes the setting for the Vatolla onion festival.
